Wolfburn also releases a seasonal roster of limited-edition bottlings exclusively for their collector base and visitors to the distillery.Brief Summary of Book: Let it Snow by John Green Alongside the core quartet (Northland, Aurora, Morven and Langskip), Wolfburn’s ever-impressive Small Batch Release labels allow Whisky lovers the opportunity to indulge in the kind of flavour exploration once the preserve of white spirit drinkers. Without the constraint of an age statement, Wolfburn has the freedom to work with malts of various ages, make-up and finish, and therefore create flavour profiles that fall outside the traditional spectrum of numbers. Wolfburn’s Whiskies are never chill filtered or coloured. Once the distillation is complete the Whisky is left to mature on-site in hand-selected casks that are stored using traditional dunnage methods. Kerr aims to project the delicate volatiles-generated via the longer ferment and throughout the distillation and maturation-into the finished Whisky. Wolfburn’s distillation time is a lengthy four-plus hours, during which the harsher, more sulphurous compounds are stripped out, resulting in a lovely, light and sweet spirit, with almost zero impurities. The wash is then slowly double-distilled in traditional pot stills, specifically designed and handcrafted by coppersmith Forsyths of Rothes. The Wolfburn stillmen use a 1.1-tonne mash and draw off clear wort, which is then given a long fermentation around 75 hours, 50% longer than average. The new man in the hot seat is Iain Kerr, following 12 years at Glenlivet. It’s always been our motto that what’s in the bottle counts, not what’s on the label, and Wolfburn-with whiskies that carry no age statement-is one of those distilleries redefining the time required for very high-quality Whisky to be delivered.įounding distiller Shane Fraser may have moved on -he is now managing a malt distillery in upstate New York-yet Wolfburn has not missed a beat. If we ever had any doubts as to why we moved into spirits or, more precisely, why we chased so hard to get the agency for (at the time) an unknown producer, the answers lie in these bottles. ![]() Wolfburn is now in over 30 markets worldwide and is hugely popular in places like Japan and the west coast of the U.S.A. Through their no-compromise approach at each stage of production and their highly respected extended distillation, the quality that Wolfburn has been able to offer with their early releases has seen an ever-growing demand and recognition emerge from both Whisky drinkers and critics alike. Despite this short period, the spirits released so far from this fiercely independent producer have already reached dizzying heights of quality. Not long has passed since the reborn Wolfburn Distillery started laying down casks once more on Burns Night 2013. After 150 years, the malt stills of Wolfburn are, once again, firing. The last time Whisky was made in Thurso there was a price on Ned Kelly’s head, dead or alive. ![]()
